Quinoa is a plant native to South America, which is not a cereal, but its use and nutritional value are similar. The Incas revered quinoa as the mother of all grains and used it not only for food but also for ceremonies, but production almost ceased after the arrival of the conquerors and only in the past few decades has it started to be rediscovered.
The seeds of quinoa are covered with a special substance called saponin, which serves the purpose of keeping insects and birds away (natural defense). This protective layer has a slightly bitter taste, so it's advisable to thoroughly wash the seeds before use.

Quinoa has a high protein content and its amino acid profile is favorable, rich in essential amino acids such as methionine, lysine, and cystine.
Fiber is beneficial for digestion, helping to overcome constipation.
Quinoa is rich in potassium, magnesium, calcium, iron, and phosphorus. It also contains B vitamins and vitamin E.
Cukorbetegeknek, inzulinrezisztenciásoknak, fogyókúrázóknak, szív- és érrendszeri problémákkal küzdőknek, illetve migrénes és emésztési panaszos betegeknek is érdemes beillesztenie a quinoát az étrendjükbe. Mivel a quinoa nem tartalmaz glutént, a gluténmentes diétában is van helye.
Usage: After thorough washing, boil in double the amount of hot water for about 15 minutes.
Fogyasztható köretként, kásaként, salátához adva és desszertek alapanyaga is lehet. Mivel alapjában véve semleges az íze, édesen és sósan is elkészíthető.
