Oat flour contains less starch and more fiber, protein, and fat compared to other cereal flours, which results in a slower and less pronounced increase in blood sugar levels (lower glycemic index). Therefore, it is recommended to replace refined flour with oat flour in case of blood sugar issues.

Usage:
Oat flour is suitable for making desserts, pancakes, cookies, pizza dough, and pie crusts, but for yeast doughs and bread it is better to mix it with other flours (such as durum wheat flour) because oat flour alone cannot produce as loose and elastic dough as we are used to with wheat flour. It can be used for breading, thickening, and in patties as well.
