Preparation: Separate 6 medium-sized eggs (approx. 320 g) and beat the egg whites into stiff peaks with a pinch of salt. Mix the egg yolks with 60-70g erythritol or xylitol in a food processor until light and creamy. Add 6 tablespoons of cold water, 2 tablespoons of melted coconut oil, and the flour mixture to the egg yolk mixture, and mix until smooth. Gradually fold in the egg white mixture with gentle, sweeping motions to avoid breaking it. Bake in a 24 cm silicone cake pan or a 25*20 cm baking pan at 180°C (top-bottom heat) for 35 minutes (perform a skewer test to check doneness). This sponge can serve as the base for various kinds of cakes and pastries. Avoid using a fan-forced setting while baking.
