Pepper has a fresh, woody taste, spicy and pleasantly aromatic. White pepper has a spicier and less penetrating flavor than black pepper. Green pepper is not as spicy, but has a clean, fresh taste.
Green peppercorns are left to dry in the sun, which causes them to shrink, harden, and turn black. The black peppercorns are wrinklier than other types.
One important culinary advantage of black pepper is that it 'pulls together', harmonizes flavors when the taste of a dish falls apart, not giving a uniform taste impression.
