The terms Cassava, Manioc, Tapioca, or Gari all refer to the same thing: a flour or meal extracted and cleaned from a root. It is a popular everyday food in West Africa. One of its excellent properties is that it absorbs a lot of water and swells multiple times its original size.
This is a special, gluten-free flour that has many benefits: it is high in nutrients, rich in minerals and dietary fibers. It contains resistant starch. Resistant starch has physiological effects similar to dietary fiber, it has a prebiotic effect, most of it passes through the small intestine unchanged, it is not absorbed, therefore it does not raise blood sugar levels.
