Cinnamon is the dried bark of a tree belonging to the laurel family. Evergreen cinnamon trees grow wild up to 10 meters tall, but they have a lower yield. Harvesting is easier from the cultivated lower stock. Cinnamon sticks are produced by interlocking the longest and most valuable pieces of the outer part of the bark. They are rolled by hand, compressing the edges together. They are adjusted daily until completely dried, turning reddish-brown in color, and their texture becomes fine, thin, and brittle.
Uses in cooking:
It can be used for both sweet and savory dishes. It is particularly suitable for flavoring lamb dishes, rice dishes, fruit compotes (primarily apple and pear, but it also wonderfully enhances the flavor of plums), chocolate desserts, pastries, drinks, and spicy breads. Cinnamon can be used to flavor beer and wine, and is an excellent spice for mulled wine.
