Dried cassava roots are ground into a fine powder. It is not the same as tapioca starch, which is extracted from it by hydrolysis. It has a high water-absorbing capacity, so when mixed into wheat flour, it can prevent a soggy bread crumb. It can be used in small quantities as a compromise in paleo.
