Whole (with the fruit shell containing the seeds) and ground are both available for sale and use. Harvesting the fruit is a meticulous and time-consuming task, making it one of the most valuable spices in the world.
The fruit shell does not contain essential oils, so it is uninteresting in terms of aroma transmission, but it makes cooking easier as you do not have to search for the tiny seeds in the finished dish. The seeds have an aromatic, slightly camphoraceous smell, with a sweet and spicy taste.
They are excellent for use in sweets, creams, chocolate drinks, pastries, or in coffee, tea, brines, in seasoning sausage or minced meat.
A common ingredient in curry spice blends.
