Usage:
The gluten of wheat is an elastic, expandable material that allows for baking beautiful, high bread from wheat flour. Wheat gluten can also be used to make wheat meat (seitan) when properly seasoned. When fried or baked, it provides a similar texture and flavor to meat. It is used for improving low-gluten flours (e.g. bread baking) and for making seitan.
