What is Erythritol?
Erythritol is a naturally occurring sweet substance found in vegetables and fruits, which is obtained in large quantities through the fermentation of plants, purified and crystallized, to make it suitable for use as a sweetener in a way similar to sugar.
However, their features differ:
- Glycemic index: 0
- Practically calorie-free (just 20kcal/100g)
- It does not raise either blood sugar or insulin levels;
- Unlike other sweeteners, it has no aftertaste and does not cause diarrhea
- Helps prevent tooth decay and the formation of tartar;
- Dishes made with it spoil more slowly because it doesn't provide a good base for fungi and bacteria to feed on;
- Diabetics, dieters, and those fighting candida can also use it abundantly
- Can be used for baking, as it does not lose its sweet taste and does not become bitter at high temperatures.
