Carob powder is made from the fruit of the carob tree, similar in color and scent to cocoa, slightly sweet in taste, rich in dietary fiber. It is antioxidant, rich in vitamins (A and B vitamins), calcium and minerals. It has lower fat content and higher carbohydrate content than cocoa powder. It is caffeine-, theobromine-, gluten- and lactose-free, does not contain cholesterol and is low in sodium. Carob can be safely consumed by children, pregnant and lactating mothers, the elderly, those with gluten sensitivity, lactose sensitivity, and those sensitive to cocoa.
You can use cacao powder instead, or mixed half and half with cocoa powder. Due to its sweet taste, it is not necessary at all or only slightly to sweeten.
