For many people, coconut milk refers to the liquid found in a coconut, but this is not the case. Coconut milk is produced by pureeing the coconut meat with water, then straining this mixture through a cloth. As a result of this process, an aromatic, creamy, and flavorful liquid is created, typically with a fat content of about 15-25%, which also depends on the amount of water used. The leftover fibrous mass is then re-extracted and squeezed with boiling water, resulting in a less creamy, thinner coconut milk. The remaining residue is used as a protein-rich animal feed.
Since coconut milk is not made from high-fat animal milk, it cannot be homogenized for extended periods of time. Therefore, the fat and water layers separate in the can, which is a natural phenomenon and not an indication of quality issues. Before using, shake the coconut milk thoroughly.
