The Szafi Free Millet Sponge Cake Flour Mix is a gluten-free flour mix rich in dietary fibers, with which you can easily prepare gluten-free pastries without using eggs and milk, which can also be incorporated into the diet of vegans.
Usage recommendation:
Sponge cake (for a 20 cm mold)
Ingredients:
- 250 g Szafi Free buckwheat biscuit flour mix
- 15g of Szafi Reform quadruple strength sugar substitute
- 30 g 100% lemon juice
- 200 g (2 dl) water
- (1 tsp vanilla extract, zest of 1 lemon)
- 100 g apricot jam with no added sugar
Preparation:
- Preheat the oven to 180 degrees, grease a cake tin (approx. 20 cm in diameter) with dietary oil.
- Measure water, lemon juice, jam, and sweetener/sugar into a bowl, then mix well.
- Finally, add the buckwheat biscuit flour mixture and, with the help of a hand whisk, mix quickly until creamy, then pour the thick cream into the mold.
- Preheat the oven to 180 degrees Celsius and bake for about 25 minutes using the top and bottom heating function. (Baking time may vary depending on the oven and cake pan, so the toothpick test is important!)
Warning: Since this sponge cake does not contain eggs or baking powder, it will only rise slightly, but it can still be cut very nicely in half and filled with our favorite cake cream.
