    Beta-carotene is an antioxidant that converts to vitamin A and plays a crucial role in maintaining health. Some fruits and vegetables get their red, yellow, and orange colors thanks to beta-carotene.


    The name carrot comes from the Latin name of the vegetable. Beta-carotene was discovered by the scientist H. Wackenroder, who crystallized it from a carrot in 1831.
