WHEAT GERM Germ is the 'embryo' of wheat, a part of the wheat grain from which the new plant develops. It is separated during milling into flour. Though forming only a small part of the kernel, germ is highly nutritious. To protect the germ, the flour’s nutrients accumulate, resulting in the development of the seed’s seven-layered coat. Germ contains many unique proteins, oils, and vitamins dissolved in it. It is consumed plain, or together with flour to thicken soups, stews, and sauces.
