    Couscous, of Berber origin, is made from durum wheat semolina. Originally, the semolina was hand-rolled into tiny balls, steamed, and then rolled in flour. Its great advantage is that it cooks up very quickly, so if you're short on time, it's a great choice.


    Preparation suggestion: pour couscous into one and a half times the amount of boiling, herb-infused water, remove from heat and let it rest covered for 10 minutes. You can serve it as a mouthwatering main course mixed with steamed vegetables and grilled (cereal) meat.
