Millet is one of the oldest types of cereals, originating in China. It was forgotten for a while, but luckily more and more people are rediscovering it. Among cereals, it is one of the richest sources of magnesium, and it also contains phosphorus, manganese, silica, fluoride, potassium, zinc, and iron. It is particularly rich in vitamins E and B. The carbohydrates in it are mostly starch, which the body can use as an energy source. It helps with alkalizing and due to its high fiber content, it is very easily digestible and creates a quick feeling of fullness. A very important benefit is that it is gluten-free.
As a side dish or dessert, it can be prepared in many ways.
Preparation suggestion: Sauté in a little oil, then cook in twice the amount of salted water and steam until ready in 20 minutes!
