We use it both whole and ground. Whole peppercorns, when stored in an airtight container, can retain their flavor for an almost unlimited period of time. For ground pepper, the finer the quality of grinding, the more intensely it releases its aromas.
Black pepper, white pepper, and green pepper are the fruits of the same plant, harvested at different stages of ripeness, and processed differently as well. The seeds are harvested in unripe state, then their fermentation is prevented by boiling or soaking in salt-and-vinegar brine. They are either dried, ground, pickled in vinegar, or sometimes sold fresh.
This pepper variety has a fruity-tart flavor profile, with a mild spiciness.
Usage: it can be used with almost any type of food, from soups to meat and fish dishes, all the way to pastries. For those sensitive to pepper or following a diet, it can be replaced with marjoram.
