Due to its wide range of uses, garlic is a very popular ingredient. Black garlic is produced from fresh garlic through a fermentation production process. During this process, the characteristic white color of garlic changes to a brownish-black shade, and its spicy taste turns into a sweet-salty flavor profile. A odorless extract is created as the components responsible for the pungent smell decrease significantly during production. The process takes place at controlled temperatures (usually 60-90°C) and high humidity levels (70-90%) for approximately 60 days.
The biological activity of raw garlic changes significantly during the production process of black garlic. The process occurs naturally without the addition of any other ingredients. Treatment at high temperatures initiates non-enzymatic processes such as the Maillard reaction, caramelization, and oxidation of phenolic compounds, which are responsible for the color change. Research on black garlic is increasingly expanding.
This results in the formation of stable and water-soluble organic sulfur compounds, such as S-allyl-cysteine. Black garlic has a significantly higher concentration of S-allyl-cysteine compared to fresh garlic. When formulating the product, we use not the powdered granulate of garlic, but its concentrated extract.

Hard capsules are usually made of animal-derived bovine gelatin, or directly produced from cellulose derived from some fibrous plant material, or possibly from pullulan.
It is important to note that the moisture content of gelatin capsules is higher compared to vegetable HPMC capsules.
Gelatin contains about 10% moisture, which can have a negative impact on the organoleptic properties of black garlic. Black garlic is hygroscopic, and materials with such properties can make gelatin capsules brittle. The hygroscopic materials can extract moisture content from the capsule wall, causing the black garlic to become lumpy and clump together with the powdered content in the capsule, negatively affecting the product's stability.
