Ingredients (for 4 pitas):
- 250g Szafi Free Buckwheat Gluten-Free Reduced-Fiber Universal Flour Blend
- 5g salt
- 3g of yeast powder
- 280g lukewarm water;
- + 3g flour for kneading and shaping
- + 1 g of oil for greasing before baking
Preparation:
Mix the dry ingredients together, then pour the water over it and stir with a wooden spoon until thickened.
Afterwards, cover the container and let the dough rest for 30 minutes.
Once the resting time is up, knead the dough on a floured surface and then divide it into 4 equal pieces by weight.
Let's cut a circle with a diameter of 14 cm from each of them.
Place them on a baking sheet lined with parchment paper, and brush the tops with oil.
Baking:
Preheat the oven to 180 degrees Celsius, with convection, without steam, for 20 minutes.
When taken out of the oven, they will still be hard, but as they cool, they will soften.
Note:
It may happen that not all pockets rise evenly during baking to create a "pocket" that can be cut with a knife, but they are still very well fillable.
