Unlike traditional white flours, this flour not only contains the inner kernel of the wheat grain, but also the smaller parts of the germ and bran thanks to the special milling technology, making it richer in fiber, minerals and vitamins. The outer layer of the wheat grain - which absorbs environmental pollutants - is removed before grinding the flour to make it as pure and pollution-free as possible. Once you taste it, you won't want to use any other type of flour. Király wheat is a wheat variety bred by crossing spelt and emmer wheat, combining the vitality and robustness of spelt, its high protein content with the hardness of emmer wheat, its excellently elastic gluten structure and exceptional drought tolerance. (Emmer wheat was the most typical wheat of ancient Egypt and Babylon.) The protein content of flours made from Király wheat is significantly higher compared to ordinary flours and its amino acid composition is much more favorable. Its color is more yellowish compared to traditional flours due to the natural carotene pigment present in wheat. It is a 'live' flour, which is why for the preparation of leavened doughs, 1.5% or 1.5 grams of fresh yeast or equivalent sourdough per 1 kg of flour is sufficient, unlike with 'lifeless' flours where 5% (5 grams) is needed.
