Tapioca pasta is a type of pasta used in Asia, gluten-free. Transparent, elastic in texture, it is favored in Vietnamese cuisine. It is an excellent spaghetti substitute for those following the Paleo diet. When used in stir-fried dishes, it absorbs the sauce, so more liquid needs to be used; if fried in oil, it does not absorb much oil. Usage recommendation: use in soups or pastas, with vegetables, in stir-fried dishes. Fried up to a crispy point in oil heated to 160-180 degrees Celsius, it goes well with almost anything that used to be prepared with fried pasta. Preparation of tapioca pasta: - Wash the pasta in cold water. - Cook in boiling water until soft. - Drain and put back in cold water. - Drain again and use in dishes.
