The black cardamom pods and the seeds inside them are utilized. Black cardamom is larger in size than green cardamom, with a rough surface and dark brown color. After harvesting, they are dried over a fire, giving them a smoky flavor alongside the camphor notes.
Unlike green cardamom, black cardamom is not suitable for seasoning desserts.
Indian cuisine uses spices and sauces for meat dishes, while Vietnamese cuisine uses them for flavoring Pho soup, among others.
