The theobroma cacao tree, originating from the tropical climate of South America, is considered the sacred tree of the Maya and Aztec civilizations. Cocoa beans produced by Peruvian organic farmers contain more antioxidants than red wine and three times more than green tea. Cocoa beans are a rich source of minerals.
Raw cocoa beans are handpicked, selecting the best quality ones and fermenting them to reduce their initial bitterness. After cleaning the dried beans in pure water, they are peeled, cut to remove the core, and crushed. These are ground into cocoa paste. The fat from the paste is separated from the solids, the residue is dried and ground into fine cocoa powder. Cocoa powder contains less fat and more fiber than the beans. The manufacturing process preserves a significant portion of the bean's nutritional value, without any additives.
Cocoa powder is widely used in a variety of foods, beverages, and desserts as a key ingredient.
