    Freeze-drying, as a process, may seem complicated at first, but the phenomenon can be observed in nature.
    The essence of the process is that the moist (water-containing) product to be dried is first frozen, then very slowly heated at very low pressure to make the frozen ice disappear from it.
    To be precise, the ice turns into steam without going through the liquid phase!

    There are two major advantages of freeze-drying over traditional drying methods.
    The first one is that the product is not subjected to significant heat, so valuable components are not damaged. Vitamins do not break down, the color and flavor of the product remain, and fruit sugars are not harmed.
    The other advantage is that during drying, there is no liquid water present for a moment, so there is no evaporation either. Because of this, valuable substances do not escape with evaporating water from the fruits, but remain in them entirely.
