Sugar-free muffin flour mix with which you can easily make gluten-free, dairy-free, and paleo muffins or desserts.
The resulting muffins can be incorporated into the diets of those looking to lose weight or of individuals with diabetes!
Diabetic chocolate muffin recipe
Ingredients (for 8 muffins):
140 g Szafi Reform chocolate-flavored muffin mix
4 medium eggs
20 g coconut oil (can be replaced with 10 g of water!)
70 g water
approx. 40-50 grams of crystalline sweetener equivalent to erythritol
Instructions:
Combine whole eggs with coconut oil and water. (No need to separately beat the egg whites!)
Add the sweetener and flour mix, and mix until creamy using a hand whisk.
Then, spoon the mixture into 8 large muffin molds (non-stick!)
Finally, bake in a preheated oven at 180 degrees Celsius for 20 minutes (using top-bottom heat setting!)
