Although corn is a cereal belonging to the grass family, its appearance is quite different from other plants in this group. It has been cultivated for 5-7 thousand years, and it was the ancient food of the Native Americans. It was brought to Europe by Christopher Columbus, spread across the continent through Spanish mediation, and later in Asia as well. It arrived in Hungary from Turkey. Its important nutritional and physiological significance comes from its high protein and carbohydrate content. The sugar content in tender corn is the highest. The amount of protein it contains is similar to legumes, while its fat content is four times that of green peas. It contains more vitamins, primarily B1, B2, B3, C, and E vitamins, thus playing a role in the proper functioning of the nervous system, skin protection, appropriate functioning of metabolism, and the preservation of the health of bones, teeth, and blood vessels.



    Among the minerals it contains, calcium, magnesium, potassium, iron, zinc, and copper can be mentioned, which help optimal heart, muscle, and intestinal function. Calcium strengthens our bones, zinc strengthens our immune system and protects our skin. In Hungary, the region with the most traditional corn-based dishes is Őrség, while in Transylvania, polenta is a popular traditional dish. Our grandmothers most frequently made porridge, mash, dumplings, and cornbread from it. Since it is gluten-free, it can also be consumed by those with gluten intolerance. Among the spices, it goes well with thyme, savory, rosemary, and marjoram.
