    Couscous is hulled, coarsely ground durum wheat grains, essentially tiny pasta. It originates from North Africa. The granules, a by-product of stone milling, were kneaded together very finely with flour and water. Nowadays, it is mostly made by machines. Thanks to pre-steaming, it can be prepared very quickly, even without cooking.


    Significance, effects: Couscous mainly contains carbohydrates, in the form of starch, which is a valuable source of energy. It is easily digestible. It has a high glycemic index, so it is not particularly recommended for diabetes and insulin resistance, as well as during weight loss.


    Usage:


    It can be eaten as a side dish, main course, or as a pasta, served with salads, sauces, and dressings. It should be cooked in water or steamed. It can also be prepared by pouring hot water over it (in a 1:1 ratio) without cooking.
