    Corn is one of the most popular grains, consumed by many people in various ways. Although corn is a cereal belonging to the grass family, its appearance is quite different from other plants in this group. It has been cultivated for 5-7 thousand years and was a staple food for Native Americans. It was brought to Europe by Christopher Columbus and spread across the continent with the help of the Spanish, reaching Asia as well. In Hungary, it arrived from Turkey. Its high protein and carbohydrate content gives it an important nutritional significance. The sugar content is highest in young corn. The amount of protein it contains is similar to legumes, but its fat content is four times that of green peas.



    It contains several vitamins, especially vitamins B1, B2, B3, C, and E, playing a role in maintaining the proper functioning of the nervous system, protecting the skin, supporting metabolic functions, and preserving the health of bones, teeth, and blood vessels. Among the minerals it contains, calcium, magnesium, potassium, iron, zinc, and copper can be mentioned, which contribute to the optimal function of the heart, muscles, and intestines. Calcium strengthens our bones, zinc boosts our immune system and protects our skin. In Hungary, the most traditional corn-based dishes can be found in Őrség, while in Transylvania, puliszka is a popular dish. Our grandmothers often made proso, gánica, dödölle, and cornbread from it. As it is gluten-free, it can be consumed by those with sensitivity to flour. It pairs well with spices such as thyme, savory, rosemary, and marjoram.
