    With this versatile ingredient, you can easily create all your favorite savory or sweet, soft yeast pastries, breads, and pastries. Basic flour for dietary kitchens. * Compared to general gluten-free flours with high starch content, it is a product with a reduced carbohydrate content by about 30%. Preparation of sweet or savory basic dough: Mix 3 medium eggs (about 155 g) with 20 ml of fresh lemon juice, 130 ml of lukewarm water, 25 g of softened coconut oil, and 40 g of crystalline sweetener (erythritol, xylitol, glycine, etc.) or 5 g of salt, and add 200 g of flour. Mix for at least 3 minutes. Then let the dough rest for 30 minutes in a cool place for its final density. Turn it over on a silicone mat or a lightly floured surface, then roll it out into a 30*25 cm sheet, flouring it underneath and on top if you are preparing filled pastries, rolls, baton, or babka. Divide it into 6 parts if you are shaping croissants, rolls, or bake a 25 cm long loaf from the whole dough.


    Average baking times: small pastries, rolls, snails, etc.: bake at 200 degrees Celsius for 20 minutes, at 180 degrees Celsius for 15 minutes (depending on your oven, it can be more or less). Bake bread at 200 degrees Celsius for 50 minutes.


    Ingredients: tapioca starch, blend of defatted seed flours (golden flax seed flour, sesame seed flour, coconut flour), dietary fibers (bamboo fiber flour, psyllium husk flour), acidity regulator: cream of tartar, raising agent: sodium bicarbonate. Produced in a facility that uses sesame seeds and nuts.
