Freeze-drying, as a process, may seem complicated at first, but it is observable in nature as well.
The essence of the process is that the wet (containing water) product to be dried is first frozen, then slowly heated at very low pressure to make the frozen water disappear from it.
More precisely, the ice turns directly into vapor (skipping the liquid phase!).
There are two major advantages of freeze-drying compared to traditional drying methods.
Firstly, the product is not subjected to significant heat, so the valuable components are not damaged. Vitamins do not degrade, the color and flavor of the product remain, and the fruit sugar is not damaged.The other advantage is that there is no liquid water present during drying, so there is no evaporation. This means that the valuable substances do not escape with the evaporating water from the fruits, but remain in them entirely.
Therefore, later there is no need to 'add' anything, so products dried in this way do not contain any added flavor, sugar, coloring, vitamins, minerals, everything remains 'original' in them.
