    When it comes to pepper, it's worth talking about it solely as the king of spices. It is the most widespread seasoning in the world, having become an essential element of almost every nation's gastronomy. In ancient and medieval times, its price matched that of gold and it was considered just as widely accepted as a form of currency. Empires competed for possession and trade of it, and essentially this spice was the catalyst for great discoveries.

    We use it both ground and whole. When it comes to ground pepper, the finer the quality of the grind, the more intensely it releases its aromas.


    Black, white, and green peppercorns all come from the same plant but are harvested at different stages of ripeness and undergo different processing. The berries are picked when fully ripe and then soaked for several days to soften the skin. The outer surface of the berries is then removed and dried.
