Black rice is a short-grain, high-fiber variety of rice. Due to its high anthocyanin content, black rice is black, and this antioxidant is responsible for the color of beets or red cabbage. Its taste makes it suitable for both savory and sweet dishes. Before cooking, the grains are black, but when cooked, they turn dark purple. Low in carbohydrates, but high in fiber and plant compounds that help fight heart disease and cancer. Not to be confused with wild rice.
