The seeds of the evergreen Pimenta trees provide the spice. The seeds are harvested green, which turn brown and wrinkled after drying. It has a scent similar to cloves, with a hint of cinnamon, and its taste is reminiscent of pepper, with a similar spicy kick. Christopher Columbus, until his death, believed that he had found pepper in the Caribbean Islands. Its name also comes from here, as in Spanish "Pimienta" means pepper. It can be used for marinating fish and meat dishes, making stews and sauces, and flavoring pâtés.
