The spice comes from the pod fruit of a vine native to Mexico. The harvested, immature green pods are processed with heat, then dried, and matured for several months. This is how it gets its shiny brown color and longitudinal wrinkles, on which vanilla crystals often precipitate, appearing as white spots.
When using vanilla, split the vanilla bean lengthwise and scrape out the crystals. The split bean can be used to make vanilla sugar or added into a dessert in the making.
