Botanically belonging to two separate genera, but both belonging to the family of Brassicaceae, the seeds of these plants provide the spice. The seed of white mustard is yellowish-sandy in color, while the seed of black mustard has a brownish-black appearance.
Their taste is spicy, their aroma only appears after breaking or grinding the seeds. White mustard is mildly spicy, black mustard is more intense, with a slightly bitter undertone.
Mustard seed is a common ingredient in table mustard as well as in marinades, spice blends, rubs, and pickles.
