It plays a decisive role in modern nutrition and expands the fresh, winter vegetable selection. Thanks to its fiber content, it helps digestion. It contains mineral salts, calcium, potassium, phosphorus, and lime. It has almost as much vitamin A as carrots, but its vitamin C content is insignificant. Its root contains latex and 15% inulin, which gives chicory coffee its bitter taste. Latex can also be found in its leaves. The chicory root is used for coffee and inulin production.
