The tiger nut or earth almond is not actually a nut, but rather the tuber of a grass species native to North Africa and the Mediterranean region, which has been consumed for centuries. Tiger nut flour is relatively less known in Hungary but worth experimenting with, especially for those with gluten sensitivities.
Interestingly, it is said that carp love wild peanuts growing in the wild.
Importance, impacts:
Almond flour has a high fat content and a favorable fatty acid composition. It is also significant in fiber, with much of it coming from resistant starch. Almond flour is easier to digest, making it a good choice for those who have trouble with other gluten-free flours (e.g. coconut flour).
Usage:
Almond flour can be used on its own or mixed with other gluten-free flours. Its slightly sweet, nutty flavor allows us to make our pastries with less sugar. Due to its taste, it also pairs well with vegan burger patties. It can also be used for breading.
