Couscous is cracked, coarsely ground durum wheat grains, essentially very small pasta. It originally comes from North Africa. The grains created as a byproduct of stone milling were mixed with flour and water, kneaded very finely. Nowadays, it is almost exclusively made by machines. Thanks to pre-steaming, it can be prepared very quickly, even without cooking.

Couscous mainly contains carbohydrates in the form of starch, which is a valuable source of energy. It is easily digestible. It has a high glycemic index, so it is not particularly recommended for diabetes, insulin resistance, or during dieting.
Usage:
Can be eaten as a side dish or main dish, but can also be consumed with salads, sauces, and dressings. It should be boiled in water or steamed until soft. By pouring it into boiling water (in a 1:1 ratio) and letting it sit for fifteen minutes, it can be prepared without cooking.
