Product Description
Pectin is a water-soluble dietary fiber that is naturally found in many fruits and vegetables. When mixed in liquid, it forms a gel upon heating, making it a great thickening agent. It is commonly used in the food industry as a gelling agent, texturizer, and stabilizer.
Ingredients: pectin (E440) (from citrus peel)
Importance, impacts:
Pectin resists human digestion, does not break down and get absorbed in the small intestine, so it cannot be considered a source of nutrients. As a fiber, it can support digestion and increase the feeling of fullness.
Usage:
Pectin is primarily used for making jams and jellies as a thickening agent. With its help, jams or jellies can be thickened in minutes, and it is also excellent for sugar-free versions. Pectin does not affect the taste of the fruits, and the finished jam will not have any unpleasant aftertaste. Depending on the type of fruit and the desired consistency of the jam/jelly, a 80g pack of pectin is sufficient for about 10-12 kg of fruit. Mix the pectin with sugar or sweetener during cooking before adding it to the fruit puree. Lemon juice enhances the thickening power of pectin and gives the jam a beautiful, vibrant color.
