Sugarcane, used for making sugar, grows in tropical and subtropical regions. Interestingly, during harvest, only the stem of the plant is cut, not uprooted, allowing it to regrow without the need for replanting, making it a renewable source of sugar. This not only makes sugar production cost-effective, but also environmentally friendly.
Cane sugar is extracted from the juice found in the fleshy stem of the plant, without using any additives during processing. During the process, the fine, crystalline sugar separates from the molasses (which is later used in rum production), but some coloring agents remain trapped in the sugar crystals, giving sugar its unique, pleasant color.
During the processing of organic cane sugar, it is crystallized only once, making it the least refined form of cane sugar (aside from raw cane sugar).
Chemically, cane sugar is the same as sucrose (a carbohydrate consisting of two sugar molecules) as beet sugar, so it is not recommended for those who need to watch their sugar intake. However, since it is natural, free of impurities and artificial coloring, it is a better choice for everyone else.

Usage: Similar to beet sugar, it can be used in food, drinks, baking, cooking, or cold dishes. Its taste and aroma are more intense, softer, giving a unique aroma to dishes. It is particularly worth replacing beet sugar with cane sugar in dishes where the taste of sugar is important (e.g. meringue, buttercream, caramel).
