Recipe: Mix 1 medium (55g) egg with the flour mix, grate the zest of half a lemon. Work thoroughly and form a ball. You'll get soft dough, so roll it out between two sheets of parchment paper or clingfilm to about 0.5 cm thickness, then prick it and place it on a baking sheet lined with parchment paper. Bake in a 175-degree Celsius convection oven for 8-10 minutes. Fill with sugar-free jam and serve.
