Quinoa - besides being very tasty - is extremely nutritious and plays a role in preventing and treating many diseases. Taxonomically, it is not a grain but a fruit of the Chenopodium plant family - gluten-free, very easily digestible, high in protein content, containing all 9 essential amino acids. Additionally, it is rich in potassium, manganese, calcium, magnesium, iron, copper, and phosphorus, and contains larger amounts of vitamins B, C, and E.
Just like rice, this also needs to be rinsed before cooking, as it can be bitter. Although most products have already been washed before packaging, it is worth rinsing well just in case. After washing, it should be cooked in double the amount of water, for about 15-20 minutes, until all the liquid has evaporated. If we toast it slightly before cooking, it will have a slightly nutty taste. It goes well with any dish where rice would be used.
