The Japanese horseradish is originally a plant living on the banks of mountain rivers and streams, whose root gives the spice. Its taste and aroma are similar to horseradish, but significantly more intense. Traditionally, the roots were grated on shark skin and then seasoned. Genuine wasabi is almost impossible to obtain outside of Japan, or only at a horrifically high price. Today, it has become such a popular and widespread spice that the hatake-wasabi variety is increasingly cultivated in larger quantities, which is easier and more easily grown. Wasabi powder should be mixed until lump-free with the addition of water, and the paste can then be seasoned with soy sauce to taste. Wasabi is generally paired with sushi, although it can be used with anything where horseradish would be added to the dish.
