Product Description
Our ancestors' flour for modern housewives. 12,000 years ago, humans discovered this energy-rich grain, ground it between stones, and made porridge and bread from it. For millennia, this ancient wheat provided humanity with essential food supply, yet it disappeared from our diet with the spread of industrial agriculture. We have worked hard to make this unjustly forgotten treasure accessible again so that our modern society can contribute to our ancestors' uniquely flavorful, energizing grain. The yellowish fine flour from the seed interior is rich in beta-carotene. Its lysine, micronutrient, and essential amino acid content is also high, while its carbohydrate content is low. Its abundance of antioxidants and lutein (pro A-vitamin) makes it suitable for the production of functional foods. We confidently recommend it for cooking, baking, making delicate pastries, buttery doughs, and pancakes. It can be used in a 1/3 ratio with spelt flour for making bread and yeast doughs. Dishes made from the yellow flour of ancient wheat are not only healthy and easily digestible but also delicious. Gluten sensitivity? Paleolithic diet? The gluten in emmer wheat does not contain alpha-gliadin found in modern wheat, making it safe for most gluten-sensitive individuals, as it does not trigger allergic reactions. Its use can prevent the development of gluten sensitivity. Since every individual is unique, if you have sensitivity to flour, first test emmer wheat on yourself with a small amount of flour. We recommend working with your doctor during the test.
