Product Description

Ingredients for Bread (for a 435g loaf):
- 200 g Gluten-free, low-carb bread flour blend
- 4 g Szafi Fitt Himalayan salt
- 35 g freshly squeezed lemon juice
- 20 g Szafi Reform liquid coconut oil
- 4 units of medium-sized eggs
- 75 g lukewarm water (not hot!)
- We can further enhance the flavor with dried herbs, seeds, and onions to taste.
- approx. + 5 g flour mixture for kneading
Preparation:
Mix the eggs, water, lemon juice, salt, and oil with the dough hook of a stand mixer, then add the flour and knead for another 1.5-2 minutes. (Of course, you can also knead by hand, but the bread will be denser and flatter that way).
Let the dough rest for 10 minutes. (We want the dough to be slightly sticky, as it will come together after resting.)
Knead the dough on a floured surface and shape it into a loaf.
Brush the top with oil, then cut it as desired with a sharp knife.
Preheat the oven to 200 degrees Celsius, using both the top and bottom heat, and bake for 30 minutes. Then reduce the temperature to 180 degrees and continue baking for another 30 minutes (without convection!).
You can make 5 buns, croissants, baguettes from the above recipe, but in this case the baking time at 200 degrees will shorten to 40 minutes.
Let cool on a rack, then slice.
